Shortbread recipe

Shortbread
  • Less than 30 mins preparation time

  • 10 to 30 mins cooking time

  • Makes 20-24 shortbread

Ingredients

Preparation method

  1. Heat the oven to 190C/375F/Gas 5.
  2. Beat the butter and the sugar together until smooth.
  3. Stir in the flour to get a smooth paste. Turn on to a work surface and gently roll out until the paste is 1cm/½in thick.
  4. Cut into rounds or fingers and place onto a baking tray. Sprinkle with icing sugar and chill in the fridge for 20 minutes.
  5. Bake in the oven for 15-20 minutes, or until pale golden-brown. Set aside to cool on a wire rack.

Basic scones recipe

Basic scones

Ingredients

  • plain flour, for dusting
  • 3 cups self-raising flour
  • 80g butter, cubed
  • 1 to 1 1/4 cups milk
  • jam and whipped cream, to serve

Method

  1. Preheat oven to 200°C. Lightly dust a flat baking tray with plain flour. Sift self-raising flour into a large bowl.
  2. Using your fingertips, rub butter into flour until mixture resembles breadcrumbs.
  3. Make a well in the centre. Add 1 cup of milk. Mix with a flat-bladed knife until mixture forms a soft dough, adding more milk if required. Turn onto a lightly floured surface. Knead gently until smooth (don't knead dough too much or scones will be tough).
  4. Pat dough into a 2cm-thick round. Using a 5cm (diameter) round cutter, cut out 12 rounds. Press dough together and cut out remaining 4 rounds. Place scones onto prepared baking tray, 1cm apart. Sprinkle tops with a little plain flour. Bake for 20 to 25 minutes or until golden and well risen. Transfer to a wire rack. Serve warm with jam and cream.

Crepe recipe

Ingredients

  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted

Directions

  1. In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
  2. Heat a lightly oiled frying pan over medium high heat. Pour or scoop the batter onto the pan, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  3. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

Banana Choc Chip Muffins recipe

Choc chip banana muffins

Ingredients (makes 12)

  • 60g butter
  • 2 cups self-raising flour
  • 1/2 cup caster sugar
  • 1/2 cup milk
  • 2 eggs
  • 2 ripe bananas, mashed
  • 1 cup (200g) chocolate chips  

Method

  1. Preheat oven to 200°C. Line a medium muffin tray (12 sections) with paper cases.
  2. Melt butter in a heat-proof bowl in the microwave. Set aside to cool slightly.
  3. Sift flour into a mixing bowl. Stir in sugar. Make a well in the centre of dry ingredients.
  4. Using a whisk, lightly beat milk, eggs and butter in a jug. Add to dry ingredients, along with mashed banana. Using a wooden spoon, gently mix ingredients until just combined.
  5. Stir in choc bits. Don't beat the mixture or the muffins will be tough.
  6. Spoon the mixture evenly into the muffin cases.
  7. Bake for 20 minutes or until firm on top when lightly touched. Leave in the tray for 3 minutes. Transfer the muffins to a rack to cool.
